FIELD: fish industry. SUBSTANCE: method involves processing full roes with solution of trypsin for breaking roe membranes and their removal; salting roe in brine with addition in it water-soluble antimicrobial preparation from lipids of sea fish. Solution of trypsin for roe processing contains 50-150 units of proteolytic activity in 1 l. Processing is conducted at temperature 8-20 C for 5-20 min. Antimicrobial preparation from lipids of sea fish is added in brine in amount of 15000-30000 units of antimicrobial action per 1 ml of brine. EFFECT: higher efficiency. 2 exp, 1 tbl
