FIELD: food industry. SUBSTANCE: method involves preparing aqueous solution of honey by the use of distilled water, holding it at minus 20 C until it is freezed throughout its volume, dissolving honey by applying it to the surface of ice atd an ice-honey mass ratio of 4:1 and holding it when cooling until honey crystals are formed through the entire volume of ice. Then resulting honey solution is exposed to gamma-radiation at a dose of 0.1-10 kGR. EFFECT: higher efficiency. 1 tbl
