FIELD: food industry. SUBSTANCE: bidistilled water being used as solvent is frozen to produce ice. The process is followed by sustaining till temperature of ice mass is not higher minus 20 C. 20-25 mass % of honey is applied on surface of ice. Then sustaining by cooling is carried out till crystals across the whole volume of ice are produced. EFFECT: improves efficiency of the method.
