FIELD: ethanol production. SUBSTANCE: ferment has a mixture of two species of lactose-fermenting yeast - Kluyveromyces lactis and Kluyveromyces marxianus. Preferable ratio of indicated yeast species is 1:1. Use of ferment proposed ensures to obtain 9.56-10% alcohol of parent whey volume. EFFECT: increased yield of ethanol. 1 tbl
