FIELD: alcohol industry.
SUBSTANCE: disclosed is a method of producing ethyl alcohol from a milk whey hydrolyzate, comprising filtration of milk whey, hydrolysis of the obtained milk whey filtrate in the presence of sulphuric acid with concentration of 2% by weight at temperature of 121 °C in autoclave for 45 minutes, bringing pH of hydrolyzate to 6.55 with sodium hydroxide solution, centrifuging hydrolyzate at 3,000 rpm for 10 minutes to separate precipitate, addition of additional nutrition components for yeast into the resulting liquid with subsequent pasteurisation in an autoclave at temperature of 115 °C for 20 minutes, then seeding with culture of strain Saccharomyces cerevisiae VKPM Y-1218 in concentration of 1.85×108 c/ml and cultivation at temperature 30 °C for 72 hours, extraction of ethyl alcohol from obtained wort by fractional distillation using dephlegmator, wherein during distillation fraction is collected, boiling at temperature from 78 to 95 °C.
EFFECT: invention enables to obtain ethyl alcohol from milk whey with concentration of not less than 75%.
