FIELD: food industry. SUBSTANCE: stuffing is made of snowball-tree berries and plums; prepared snowball-tree berries are held in a 10-12-% solution of cooking salt at 25-30 C for 30-40 min, washed in running water at 30-40 C, dried at 50-55 C, and pulped to separate skin and stones. The skin and stones with remaining pulp are boiled for 5-10 min. The prepared plums are blanched with live steam for 2-3 min and pulped to separate skin and stones. The resulting mass of snowball- tree berries, pulped concoction of their skin and stones is connected with remaining pulp, the prepared mass of plums is mixed with sugar and rice flour dried at 120-130 C for 20-30 min, steamed in a vacuum apparatus at 60-65 C to a dry matter content of 30% packed, sealed and sterilized in the following relation of ingredients, wt.-% snowball-tree berries, 20-25; sugar, 20; plums, 49.5-55.5; rice flour, 4.5-5.5.
