FIELD: food industry.
SUBSTANCE: to produce croquettes, potatoes are washed, peeled and boiled in salted water. Hot potatoes are dried and mashed in a mashing machine. Sweet potato tubers are boiled, peeled and mashed in a mashing machine. Mashed potatoes and sweet potatoes are combined and stirred. Cheese is mashed in a mashing machine. A ball of mashed cheese is formed, which is laid in the middle of the potato-sweet potato flat cake. The semi-finished product is shaped like a ball, which is rolled in flour, dipped in egg, breaded in breadcrumbs and deep-fried at 180°C for 5-6 minutes. The croquettes are prepared at the following ratio, mass parts: boiled sweet potato tubers - 2000; boiled potatoes - 500; hard cheese - 500; egg - 100; flour - 100; breadcrumbs - 200.
EFFECT: invention allows to expand the range of culinary products having functional-prophylactic properties.
