FIELD: food industry.
SUBSTANCE: to produce potato-sweet potato croquettes with cranberries, potatoes are washed, peeled, boiled in salted water, dried and mashed in a mashing machine. Melted fat in the form of butter and milk are introduced into the hot mashed potatoes. Sweet potato tubers are boiled, peeled and mashed in a mashing machine. Mashed sweet potatoes and potatoes are combined and stirred. Cranberry berries are washed, dried. A flat cake of mashed potatoes and sweet potatoes is moulded, in the middle of which the cranberry berries are laid. Then the resulting semi-finished product is shaped like a ball, which is rolled in flour, dipped in egg, breaded in breadcrumbs and deep-fried at 180°C for 5-6 minutes. The croquettes are prepared at the following ratios, mass parts: boiled potatoes - 500; boiled sweet potato tubers - 2000; butter - 150; milk - 150; cranberries - 400; eggs - 100; flour - 100; breadcrumbs - 200.
EFFECT: invention allows to expand the range of culinary products having functional-prophylactic properties.
