FIELD: fish processing industry. SUBSTANCE: hydrobionts are washed, cut and allowed to stand at 80-98 C within 8-12 min in water. The process is followed by salting, quantity of salting mixture being 0.06-1.2 of raw materials mass. Mixture of salt and ferment having activity 10-200 units/g which is prepared of internal organs of crustaceans is used as said salting mixture. If moisture content of raw materials i high then sodium tripolyphosphate may be added additionally to salting mixture, its quantity being 0.1-0.3 of raw materials mass.
