FIELD: food industry. SUBSTANCE: complex processing the mussels with receiving protein-carbohydrate concentrate and food protein product includes the following operations: mussel are washed with water and crushed; after that, at mixing they are treated with water solution of ferment protomegaterin and/or protacrine in amount of 10-100 PE/kg of raw material at temperature 30-60 C for 60-120 min, heated up to 80-90 C for 10-20 min. Liquid is poured out for separation of valves, filtered and centrifuged with separation of protein product of pasty consistency. Supernatant is concentrated at 80-90 C up to content of 30-50% of dry substances with receiving protein-carbohydrate concentrate. EFFECT: higher efficiency. 2 tbl
