FIELD: food industry. SUBSTANCE: process provides for contacting of chips of root-crops with extracting fluid in cells of rotational diffusion apparatus, extraction of diffusion juice from its head part and removal of pulp from tail part of drum. During process of extraction at least part of extracting fluid is taken away from zone of drum located behind zone of juice extraction by way chips move at diffusion temperature. This part of fluid is heated to scalding temperature and is re-circulated into cells of scalding of chips which have volume enlarging predominantly up to 40% in direction perpendicular to direction of movement of chips as compared with maximum value of volume of cells where chips and fluid contact at diffusion temperature. For realization of this process of production of diffusion juice there is used rotational diffusion apparatus which is equipped with means for removal of extracting fluid from cells of diffusion zone located close to cells of scalding zone and for re-circulation of this fluid in zone of chips scalding and with means of heating of extracted fluid up to scalding temperature. Scalding cells have volume exceeding in radial direction maximum value of volume of diffusion cells by at least 40%. EFFECT: increased efficiency of process. 25 cl, 7 dwg
