FIELD: food-processing industry. SUBSTANCE: method involves using salivary glands of cattle animals; mincing, extracting, separating extract; cleaning including cooling and drying. Cock's and hen's combs in addition to cattle salivary glands may be used in the ratio of 1:2-1:4. Extraction process is conducted by water in two stages with weight ratio of raw material and water of 1:6-8 and 1:1-2 at temperature of 30-40 C for 2-4 hours and 1-2 hours. Prior to cooling in the process of cleaning, extract is acidified to pH value of 3-4. Cooling process is conducted at temperature of 4-8 C for 2-4 hours.
