FIELD: meat industry. SUBSTANCE: process comprises grinding of raw material, vibration treatment in hot water, geeding of live steam to separate bone residue and aqueous fat emulsion to extract fat and water from the latter, washing and drying of bone residue followed by crushing said bone residue. Grinding is carried out to particle size of not greater than 25 nm, vibration is carried out with 1.5-3.0 and from 1.5 to 2.0 followed by filtration of aqueous fat emulsion, and prior to drying, fat-free bone residue is ground.
