FIELD: biotechnology, meet industry. SUBSTANCE: concentrate is produced from cattle abomasum taken from health animals. Raw is defatted, washed with weak tap water jet and frozen at -12-18 C for 16-28 hr. Then raw is milled in picker roll at hole diameter 4-5 mm, pH is brought about to 1.8-2.2 with 10-14% hydrochloric acid solution. Obtained mass is subjected for autolysis at 38-42 C for 1 hr and 5% sodium chloride is added to mixture. Ready concentrate is used in meet industry. Concentrate usefulness at 48 hr range.
