FIELD: production of wine. SUBSTANCE: method involves feeding of grape by whole clusters into reservoir and carbonic acid maceration. The latter process is carried within 24-60 h at 20-25 C. Said process takes place by feeding must (being at stage of intense fermentation) and by feeding carbon (which is saturated by dioxide to concentration 0.5-0.8 g/dm3,).
