FIELD: chemistry.
SUBSTANCE: invention relates to winemaking industry. In the production of red table wine material, grapes are processed to obtain pulp. Pulp is heated to 45-50°C, lysing wine yeast is added in an amount of 0.8-1.0% by volume, held at a heating temperature for 4-6 hours and cooled to ambient temperature. Yeast starter is then added, followed by fermentation of the pulp and separation of the wine material.
EFFECT: invention increases fermentation activity of wine yeast, speeds up the fermentation process, avoids the need for yeast supplementation, prevents infertility, improves product quality.
