FIELD: dairy products industry. SUBSTANCE: process envisages irradiation of milk, analysis of luminous flux followed by comparison of wave length characteristic of each component of milk with reference wave length corresponding to it and by determination of percentage composition of components. In this case partial flow separation of phase of examined samples is carried out with the use of rotary motion and each obtained phase is subjected to irradiation. Phase of examined sample of milk in zone of rotation center is used as standard, phase located in zone 1/4-1/2 radius from rotation center is used to determine percentage of fat and phase positioned in peripheral zone - is used to determine percentage of lactose. Percentage of protein is found in phase between phase determination of fat and lactose. In this case reference and characteristic wave lenghtes coincide for each component of examined sample of milk and are equal to characteristic ones. Device for implementation of process has radiation source, polychromator, dish unit and analyzer of composition of milk. Rotating disc with radial ducts is installed inside body. Body is provided with holes, hole connected to proper dishes for samples of milk. Light passing through dishes for milk is spectrum-decomposed and is analyzed in analyzer of composition of milk to determine percentage of fat, protein and lactose.
