FIELD: food industry; measurement.
SUBSTANCE: group of inventions relates to research of food products in dairy and cheese making industry, as well as in agriculture. Disclosed is a method of determining fat, protein in milk and fat in cheese made from this milk, comprising dilution of the controlled milk sample with water, homogenization, irradiation with laser radiation, measurement of scattered radiation. At that, laser radiation is selected with linear polarization, in which electric vector is directed perpendicular to horizontal plane and with wavelength in range from 0.44 mcm to 1.15 mcm, detecting intensities of laser radiation scattered back by radiation milk components and passing through the light flux cuvette, and content of fat, protein in milk is determined through recorded signals, after which content of fat in cheese is calculated based on obtained ratio of fat and protein in milk. Also described is a device for determining fat, protein in milk and fat in cheese produced from this milk.
EFFECT: higher accuracy of determination.
