FIELD: confectionery industry. SUBSTANCE: method involves preparing pectin aqueous solution and sodium lactate addition on this stage, preparing pectin-sugar-syrup at apple puree addition simultaneously with syrup for pectin part substitution, preparing fruit-paste candy, its pouring and gel formation followed by layer cutting and sprinkling ready articles with granulated sugar. During cutting splitters were used to prevent fruit-paste candy layers sticking. Transporter ribbon is sprinkled with granulated sugar. EFFECT: improved method of production. 3 tbl, 1 dwg
