FIELD: food industry, sugar production. SUBSTANCE: method involves progressive predefecation, filtration of the predefecated juice and precipitate separation, filtered juice defecation with addition of 0.5-0.6% CaO and simultaneous saturation to form carbon-calcium saccharates, addition of 0.4-0.5% CaO to the defecated juice, 1-saturation and filtration. Defecation is carried out for some steps and the used lime amount is separated for some parts and at each step 0.10-0.15% CaO is added. Saturation gas is added at each step up to carbonization degree 10-20%. EFFECT: improved juice purification degree.
