SUBSTANCE: yeast aulolyzate is added to the nutrient medium for lactic acid bacteria culturing at amount 1-2% and, additionally, - defatted milk hydrolyzate at amount 4-5 g/l and pepsin at amount 0.00015%. Also, bacteria of strains of genus Lactobacillus were used: L. acidophilum n. v. Ep 317/402 or strain L. mazuni N 2. EFFECT: improved method of dry ferment preparing. 4 tbl
