FIELD: chemical, microbiological and food-processing industries. SUBSTANCE: product is applied on both surfaces of heat-conducting wall 1; freezing of product 5 is effected at pressure not below pressure of triple point of water; on other surface 8 of wall freezing and heating processes are alternated. Freezing is continued till thickness of layer does not exceed the value determined from the formula given in Description. Freeze drier used for realization of this method has housing with drum 1 mounted rotatably inside it, heaters 19 and 28 with reflectors, brushes 17 and 20 and air supply and discharge branch pipes, loading and discharging devices 11, 30 and 16, vacuum pump. Stepped hermetic drum is made from heat-conducting material and is provided with screw feeder 20 engageable with its internal surface and lock located in drum section of larger diameter and used as accumulator. Arranged additionally inside drum 1 is fixed cylinder 26 with injectors 27 mounted over its generatrix. Injectors 27 are directed towards lower sector of drum. Cylinder and drum are mounted on two hollow half-axles 29 and 32; one half-axle is connected to injectors 27 and other half-axle is brought in communication with drum interior.
