FIELD: baking industry. SUBSTANCE: bakery oven has baking chamber, cylindrical combustion chamber 9 provided with opening and baffling cone positioned in open end of chamber 9 to define annular gas exit opening. Gaseous products produced in combustion chamber 9 exit through openings to mix with gases returned from bottoms 3 and circulate around combustion chamber 9. Obtained gaseous mixture is directed through narrow opening in partition wall separating mixing and expansion chambers and is delivered into expansion chamber and from the latter to bottoms. Construction of bottoms is such that number and position of bottoms within baking chamber may be changed. Bakery oven is assembled from modules, each having related bottom and connecting plate. Modules are connected by fastening connecting plates to each other by screws or transverse plates so that rear wall of bakery oven is defined. Oven is further provided with wall separating delivery and aspiration collectors. Wall has openings coinciding with openings through which gaseous mixture is delivered to bottoms 3. Openings are equipped with gaseous mixture flow rate regulating gates. Oven has pan-like product cars which are loaded into baking chamber.
