FIELD: oil-and-fat industry; development of new fat substituents in food-stuffs. SUBSTANCE: invention recommends to use esterified propoxylated monoglycerides and diglycerides for producing various low-caloric food-stuffs, including food-stuffs in liquid form. Said compounds monoglycerides and diglycerides can be advantageously used for partial or complete substitution of vegetable and other liquid oils in salad oil, cooking oil, as anti-spraying agents, as anti-burn agents in kitchen utensils, as ingredients in such food-stuffs as flavoring additives to salads, margarine, as additives for parting crumbly dough and pastry, as additive to peanut oil.
