FIELD: wine production, particularly, uninterrupted production of wine of sherry type at high concentration of yeast. SUBSTANCE: method is carried out in device (membrane biological reactor) being equipped with flow membrane filter and with all the units which are necessary for cultivation of yeast and for production of sherry. At the beginning of the process accumulation of sherry yeast takes place till its concentration is 5-10 billion of cells/sm3, the process is carried out at 30 C by aerobic cultivation in medium which comprises 50-60 g/dm3 of sugar. Said cultivation takes place at flow regime of nutrient medium, intensity of flow being increased proportionally to concentration of yeast. The process is carried out in biological reactor being equipped with flow membrane filter, constant level of nutrient medium being maintained in it. Juice, diluted apple concentrate, grape vacuum malt having sugar content 50-60 g/dm3 is used as nutrient medium at cultivation. When biological mass having desired concentration of yeast is accumulated in said reactor then sherry production is carried out. The process takes place by substitution of nutrient medium with alcoholized wine half-finished product which is carried out by uninterrupted feeding and aeration of half-finished wine product in reactor at rate 0.2-0.3 h-1 and by uninterrupted filtration through membrane filter of biological reactor. Thus prepared sherry half-finished product which comprises not less than 350 mg/l of aldehydes is used for production of sherry. EFFECT: improved efficiency of the method.
