FIELD: dairy industry. SUBSTANCE: method involves introducing anion solution of polysaccharide into milk raw material; separating mixture by centrifuging into casein concentrate and first fraction of polysaccharide containing precipitant which is anion solution of polysaccharide. Separation is carried out by centrifuge, and separated first fraction of polysaccharide is repeatedly used for separating milk fraction into casein concentrate and second fraction of polysaccharide.
