FIELD: agriculture and food-processing industry. SUBSTANCE: apparatus has chamber with floor, ceiling and plurality of walls. Carrier mounting construction for supporting two rows of products laid on pallets is arranged within chamber so as to separate products from walls and define space for circulation of fluid medium around products on pallets. Rows of products are spaced one relative to another to define intermediate volume between them. Each row of products has top and bottom tiers with vertical gap between them. Flexible sealing strip is attached to carrier mounting construction for isolating vertical gap between tiers from fluid medium circulation space. Apparatus has mechanism for regulating, supplying and drawing of fluid medium from intermediate volume and introducing regulated fluid medium flow into circulation space to create pressure difference between intermediate volume and fluid medium circulation space. It allows homogeneous regulated fluid medium flow to be directed through products placed on pallets.
