FIELD: dairy industry. SUBSTANCE: initial raw material is pasteurized, and introduced are maize starch and/or pectin. Prepared mixture is homogenized and cooled up to temperature of ripening; introduced in it are sour containing Lactobacillus acidophilus 317/402 in the amount of 0.3-0.7% from mixture volume, and sour containing kefir grains in the amount of 2-5% from mixture volume; soured up to 80-120 T of acidity, aged and prepacked. After ripening, natural minerals may be introduced into the product; they correspond to adequate signs of the zodiac. EFFECT: higher biologically active properties. 4 cl, 1 tbl
