FIELD: microbiology, milk and food industries. SUBSTANCE: the strain of Lactobacillus acidophilus n. v. 317/402 "Narine" AAA is cultivated upon nutritive medium which contains milk whey, potato extract, bran extract, manganese sulfate, sodium acetate, fat-free milk at dry matter content being 10-14%, microbiological agar and purified water up to 1 l. Milk whey is dissolved by a water up to lactose content being 0.6-1.2%. A liquid ferment is obtained. Then the latter is mixed with a protective medium, frozen and dried. EFFECT: increased ferment activity, shortened cultivation terms, prolonged storage period.
