FIELD: fat-and-oil industry. SUBSTANCE: warmed fat or oil in drop- liquid state is passed through alkali solution to form oil phase in the upper part of alkali solution. To the oil phase-containing solution, acid solution is added with hydrogen ion concentration 0.001-0.005 mol/l. To reduce soap in refined fat or oil, mineral or organic acid salt is introduced into upper part of alkali solution. This salt is then electrolyzed to form corresponding acid. Apparatus contains tank, in the expanded part of which, above alkali distributor, gauze electrode of conducting metal is fixed to be connected to positive pole of constant current source. Tank casing of conducting metal plays part of second electrode to be connected to negative pole of the same current source.
