FIELD: food industry. SUBSTANCE: indicator is used to obtain data on thermal history of frozen product. Container of clear material is filled with liquid medium which viscosity depends on temperature, for instance, with mixture of glycerin and water. Mobile element made from material with neutral buoyancy is placed into fluid medium. After freezing and removal of retaining bolt mobile element continuously moves inside container under action of spring to which it is attached. Movement of mobile element into new position takes place during time interval presenting function of viscosity of liquid medium. EFFECT: expanded assortment of indicators of thermal history used in conditions of cryogenic temperatures and temperatures close to room ones. 4 cl, 6 dwg
