FIELD: brewing industry. SUBSTANCE: method involves preparation of mash, its pumping into filter-tank, filtering, gathering the runnings in brewing copper till content of mass part of 15.3-15.5% of dry substances; wort hopping by introduction in it hop, and then its boiling, clarifying and cooling; fermentation in presence of yeast; afterfermentation; beer ageing and clarification. In the process of mash preparation its pH is corrected and fixed equal to 5.5-5.6 by introduction in mash concentrated apple or grape juice at the rate of 13.6-13.7 kg per 100 dal of prepared product. After pumping the mash into filter-tank, eleutherococcus is introduced at the rate of 0.245-0.255 kg per 100 dal of prepared product. Introduction of hop in wort is conducted by three portions; preliminarily ground eleutherococcus leaves are added with the last portion of hop in wort at the rate of 0.15-0.16 kg per 100 dal of prepared product. Fermentation is carried out at temperature not higher 9.5 C for 10 days till mass part of extract 4.5-4.7%. Afterfermentation is conducted for 33 days.
