FIELD: food industry. SUBSTANCE: method involves extraction of pectin from raw, its precipitation with aluminium cations, removing the latter from pectin composition and pectin drying to the working concentration. Value of pH is brought about to the required one. Nondissolved pectin salt is dried followed by its secondary processing in food production by treatment of pectin salt with hydrochloric acid solution. Then metal cations are removed by passing product through column filled with cation-exchange resin in H+-form. Solution is brought about to the required pH value with ammonium hydroxide. Method ensures to exclude the use of alcohol. EFFECT: improved method of pectin preparing. 1 dwg
