FIELD: natural compounds technology. SUBSTANCE: method includes extraction of desired substances from vegetable material and precipitation of pectin. Vegetable material is washed with 0.5-3% calcium hydroxide solution to remove ballast substances while simultaneously converting pectins and organic acids contained in material into insoluble calcium salts which are then repeatedly washed with water. Centrifugate is hydrolyzed and washed out material is extracted with sulfuric acid solution at pH 3. Pectin is isolated from solution by means of acetone and alcohol and organic acids remaining in solution are treated with activated carbon, filtered, and evaporated in vacuum to dryness.
