FIELD: food industry. SUBSTANCE: in potentiometric procedure, toxic nonaqueous solvents are substituted by water-alcohol solution. Weighed sample of vegetable oil is mixed with organic solvent, to which at most 0.5 cu. cm of standard 0.03-0.08 M oleic acid has been added and pH value of mixture measured. Sample-containing mixture is once more supplemented with 0.03-0.08 M oleic acid and pH value of resultant mixture is also measured. Acid number of vegetable oil is calculated using known formula.
