FIELD: food industry. SUBSTANCE: to simplify acid number determination, reduce operation expenses, and consumption of reagent in pH-metric procedure, rectified ethanol is used as solvent. Prior to be mixed with weighed sample of oil, solvent is alkalized with lithium hydroxide to attain pH value within the range 7.5-7.8. Value of pH of oil sample-solvent mixture is then measured, mixture is supplemented with 0.1 M acetic acid in ethanol fixanal solution and measuring pH is repeated. Acid number of vegetable oil is calculated using known formula. EFFECT: simplified procedure and reduced expenses. 6 tbl
