FIELD: baking industry. SUBSTANCE: method involves supplying heat to product by supplying heating agent to recirculation circuit; providing heating of heating agent by means of rotor-type heater. Apparatus has rotor-type heater provided with blade carrier disk and laid on disk. Heater is positioned in thermal treatment zone. Apparatus is further provided with chamber, product transportation conveyor within chamber, heating agent delivery and heating system and recirculation circuit with heating energy redistributing device disposed between conveyor runs. Space between recirculation circuit and rotor-type heater at suction line of heater does not exceed 10 mm. EFFECT: increased efficiency and improved quality of bakery product. 7 cl, 4 dwg
