FIELD: food-processing industry. SUBSTANCE: method involves feeding dough to sheeting device, reciprocating receiving and transfer device, auxiliary conveyor movable in direction parallel to that of receiving and transfer device; laying dough strip on immovable auxiliary conveyor and forming dough pack by means of receiving and transfer device; applying fat-and-flour mixture to top surface of each layer of dough pack; upon forming dough pack, moving auxiliary conveyor for distance equal to double the height of dough pack between formed pack and pack to be formed; cutting connecting members between dough packs and covering pack ends with these connecting members; rolling dough packs at an angle of 90 deg to initial sheeting direction. EFFECT: increased efficiency and reduced labor consumption for dough sheeting. 1 dwg
