FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular to machines for rolling dough into sheets of specified thickness with simultaneous formation of varied shape semi-products for bakery and flour confectionery products therefrom. The device contains a carriage, placed horizontally so that to enable reciprocal movement and relocation within the vertical plane relative to the transporter; two pairs of parallel rotary roll-out rolls and a cambered roll for formation of dough products from the rolled sheet. The cambered roll is mounted coaxial to the transporter driving shaft on two swing levers. The device is equipped by the carriage reverse mechanism which contains a pair of gear wheels mounted on either side of the common rotation axis and alternatively engaged by the drive gear of the carriage rack-and-gear drive during the reverse mechanism rocking as caused by the spring-mounted rod connected to an electromagnet. The device contains the dough sheet thickness setting mechanism; the mechanism contains a body connected to the roll-out carriage wherein one a mobile plank is installed having a profiled groove with horizontal sections. The number of horizontal sections is multiple of the thicknesses of the dough sheet being rolled out. A fixture interacts with the plank holes. The number of holes is equal to that of horizontal sections of the profiled groove. The fixture is equipped by an electromagnet connected to the controlling counter of the carriage reciprocal movement cycles. The last horizontal section of the mobile plank is designed in the form of a groove whose length is no less than the plank working stroke increment.

EFFECT: invention allows to intensify the roll-out process and to increase uniformity of the sheet structure due to maintenance of roll-out cycles number with automatic monitoring of the sheet thickness having been set.
