FIELD: hydrogenation process in food and perfumery industries. SUBSTANCE: in vegetable oil and fat hydrogenation process, hydrogen is fed through membrane catalyst to be purified and activated before it comes into contact with material to be hydrogenated. Process is carried out in presence of felt-like catalyst located on reaction surface of membrane catalyst, material to be hydrogenated being consecutively brought into contact with surface of membrane catalyst and felt-like catalyst. Felt-like material is composed of nickel or palladium alloys, or stainless steel covered with active catalytic layer: palladium, palladium alloys with ruthenium and indium, or palladium-nickel alloy in quantity 0.1 to 0.5% of the weight of felt-like material.
