FIELD: food-production industry. SUBSTANCE: method particularly relates to meat and poultry processing industry. It is intended for producing minced neat foods and other meat products with application of non-traditional additives of higher biological value. Method implies mincing of meat material, treatment of cereal including moistening at relation of cereal:water equal to 1: 3 at temperature of water to be 20-25 C during 1-2 h. After that, cereal is treated by ferments with cellulose activity during 4-6 h at ratio of cereal: water equal to 1:5 with proportion of introduced ferment equal to 0.05-0.2% with respect to substrate and at temperature of 40-50 C with pH of medium being 5.2-5.6. Then, components are introduced as prescribed. In preparing minced meat, additionally introduced is lumpy meat. After that, undertaken are mixing and final thermal treatment for producing ready food-stuff. In realization of aforesaid method, reduced is power-input in production process, thus minimizing dependence of producer on external power source.
