FIELD: dairy industry. SUBSTANCE: nutrient medium is inoculated with lactococcus and leuconostoccus cultures Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. diacetilactis with high and low acid-formation rates; Leuconostos mesenteroides subsp. cremoris and/or Leuconostos lactis at ratio 0.8:5.4:0.08:0.25:0.20. When leuconostoccus species Leuc. Lactis and Leuc. Mesenteroides subsp. cremoris are simultaneously added, their ratio is 1:1. Accumulation of bacterial cells is effected at 24-26 C in two steps: 4-6 h and 8-10 h. Volume of nutrient medium in the second step is six- to tenfold increased. Method enables preparation of lyophilized lactobacillus concentrate with elevated content of Lc. Lactis subsp. cremoris.
