FIELD: food-processing industry. SUBSTANCE: agricultural products preservative contains antimicrobic agent, nisin, lactic acid, extracellular lactic acid bacteria metabolites possessing antimicrobic activity, and further contains lactic acid bacteria metabolites produced by extraction of lactic acid bacteria destructed or nondestructed with water or aqueous-saline solutions. Lactic acid bacteria strains possessing antimicrobic activity are used as lactic acid bacteria. Preservative of such composition produces enhanced preservative effect by synergetic action of its components.
