FIELD: food-processing industry. SUBSTANCE: method involves performing coarse crushing of tomatoes with following fine crushing of tomato mass to obtain particles of size not exceeding 60 micrometers; separating crushed tomato mass into juice and flesh in gravitational settler; boiling produced juice and mixing it with flesh; sterilizing and homogenizing; packing. Juice may be boiled till dry substance content is within the range of 20-5-%. Method allows finely dispersed tomato mass with increased content of valuable substances to be produced.
