FIELD: food- processing industry. SUBSTANCE: apparatus has fryer defined by side walls and bottom covered with heat-insulating material, heater positioned in fryer, vertical guide mounted in fryer, drain unit built in fryer bottom, and cover positioned on fryer top and provided with ready dumpling discharge opening. Apparatus is further provided with ready dumplings withdrawal device, suction branch pipe, and dough forming mechanism connected with fryer through opening in fryer bottom. Vertical dough supply storage hopper is connected to fryer through single housing and closed from above with cover, and connected from below with dough forming mechanism through branch pipe. Dough forming mechanism has plunger mounted for reciprocation in vertical cylindrical sleeve fixed in fryer bottom opening and equipped with cooling system. Guide is made in the from of vertical rod with lower end rigidly attached to plunger upper part and upper end disposed is central part of fryer cover opening. Fryer cover has one end pivotally joined to shaft positioned on housing in zone adjoining upper edge of higher wall and other end loosely resting upon lower fryer wall. Such construction allows dough to be prevented from overheating. EFFECT: simplified construction and increased efficiency by improved precision of orienting dumplings in fryer. 6 cl, 6 dwg
