FIELD: food engineering. SUBSTANCE: apparatus has pressure chamber connected to drive, cylindrical sleeve communicated with pressure chamber, and forming member mounted inside cylindrical sleeve in coaxially aligned position. Maximum diameter of forming member is equal to inner diameter of cylindrical sleeve. Forming member is positioned for non-drive reciprocating axial motion in response to increase and decrease of dough pressure in pressure chamber and defining annular slit between cylindrical sleeve outlet edge and forming member in the process of movement of forming member from sleeve. Doughs are directed through annular slit to be formed into dumpling doughs. Apparatus of such construction provides improved regulation of dough sizes and kinematically independent motion of forming member, which is moved from cylindrical sleeve only in case dough pressure exceeds pressure of medium, in which forming is effected. Dumpling doughs are fed directly into fryer through frying bath bottom. Apparatus is provided with improved ready product heating and cooling system.
