FIELD: distillery industry. SUBSTANCE: method involves determining quality of alcohol by deviation of temperature from predetermined value in control zone of rectification column, as well as by deviation of temperature from predetermined value at point below control zone, which represents alcohol quality to the larger extent than temperature deviation in control zone. Lagging of temperature change at point below control zone and control zone is compensated by first signal advancing. Mentioned temperature deviations are used for increasing responsiveness of logic device which produces controlling effect upon actuating mechanism at alcohol withdrawal line and cuts it off in case of low quality of alcohol, when temperature deviations exceed allowable limits.
