FIELD: confectionery industry. SUBSTANCE: scalded spice cake is prepared from dough which contains granulated sugar, syrup, sugar-containing ingredient, sodium bicarbonate, ammonium carbonate, flavor, paste for whipping, and the first grade wheat flour. Space cake glaze includes granulated sugar and gelatin at preset ratio of components. Said method involves introduction of paste for whipping in sugar syrup at the stage of scalding. At the stage of glazing of prepared products, gelatin is introduced in syrup at ratio of 1:(142-143) to granulated sugar. Said method makes possible to remove components from receipt inclined to rancidification, and to reduce duration of technological process.
