FIELD: food- processing industry; rectangular frying pan-cakes. SUBSTANCE: fryer includes frying drum revolving in four supports. Outer surface of this drum is heated to temperature of about 200 C by means of electrical heaters mounted inside drying drum. Tanks filled with batter and chute for forming batter belt provided for smooth delivery of batter belt to surface of frying drum. Scraping knife separates pan-cake belt form drying drum surface. Rotation of shaft makes cutting edge of knife become regularly engageable with surface of bearing cylindrical drum, thus cutting the batter belt. Size of pan-cakes is set by rotational speed of shaft and required cutting force is set by degree of spring-loading of bearing drum relative to shaft of knife. To ensure reliable course of the process of cutting pan-cake belt, knife shaft and bearing drum are so mounted that their longitudinal axes are juts crossing straight lines which ensure point contact of cutting edge of knife and surface of bearing drum; cutting edge moves along surface of bearing drum in the course of cutting. Cutting edge of knife may be shifted relative to longitudinal axis of shaft. Scraper cleans and lubricates outer surface of bearing drum by its felt and-piece; this end-piece is also used for braking the drum after rotation is imparted by contact with knife. According to second version, drying drum is secured on revolving supported mounted on frame and engageable with peripheral edges of outer surface of drying drum. Supports are secured on frame for change of position of their longitudinal axes relative to frame, for example at eccentricity; they are provided with outer cooling fins which ensure control of position of drying drum, reduction of degree of heating of supports during operation and protracted operation without stops. EFFECT: enhanced reliability; improved quality of cutting batter belt; possibility of control of frying drum position; increased continuous operation. 8 cl, 4 dwg
