FIELD: food-processing industry. SUBSTANCE: electric rotary fryer has frying drum, basic vessel comprising dough, dough strip forming member for forming and feeding dough strip onto frying drum surface, and cooling water cavity, and is further equipped with supply and discharge pipelines provided with supply and suction pumps, and dough collecting vessel provided with internal wall. Dough strip forming member is made in the form of nozzle and arranged under drum so as to define gap between nozzle and frying drum surface. Dough collecting vessel is positioned under nozzle and is joined thereto along its outer diameter at mounting site, and internal wall of dough collecting vessel is faced toward nozzle and arranged so that cooling water cavity is formed between dough collecting vessel internal wall and nozzle outer surface. Nozzle inlet end is connected to outlet end of supply pipeline equipped with supplying pump. Dough collecting vessel is connected to inlet end of discharge pipeline equipped with suction pump, and inlet end of supply pipeline and outlet end of discharge pipeline are connected to basic dough vessel. Such construction provides for contact-free and continuous dough product baking process without dough delamination. EFFECT: increased area of fryer surface used for forming dough strip and, accordingly, increased efficiency, provision for regulating pump rotational speed and for regulating weight of product to be baked. 4 dwg
